Fun fact: Joshua and I saw an exhibition at the NY Natural History Museum on food and they had gathered archologists, chefs and anthropologists from around the world to define what “gourmet cuisine” is and then researched what the oldest gourmet cuisine was in the world and it was unanimously determined to be “Mole” creative by the Native American tribes of what is now Mexico!
