  1. Are the egg yolks not supposed to be cooked over the boiled water? One recipe called for the sabayon to reach the 160 degrees Fahrenheit temperature which is impossible for the simmer over boiled water method. I could get up to 120 degrees to 130 degrees Fahrenheit only.
