  1. Could you do this with a Steamer set? Put the chips into the bottom pot and the meat into the vented steam pot?

  2. 'How to smoke meat using have you already have at home'. Don't know about anyone else, but I don't have either wood chips or a colander that fits inside any of my pans. Or anything even remotely colander like that fits inside my pans. Would a steamer pan set work instead?

    I've just noticed you don't much talk about how easy clean up is or can be just that it is really important. I imagine the foil makes it easy for this, but I haven't thought about the rest of the recipes I've seen in your videos.

  5. A bit of tape on the vent? I find a small pinch of bread, any type, I use whole meal Pitts because l always have it. Dampen in water and massage into a paste. This is a brilliant vent sealer and can also be used to seal pan lids that go into ovens.

  6. Ben, if you want to smoke cheap cuts of beef like brisket or pork for pulled pork, what is the estimated time for them to cook in that smoking technique? First and foremost is it feasible to cook brisket and pork using that technique?

  7. would you need to adjust the amount of time smoking your meats if you were to use more than 2 duck breasts or is the 20min on heat : 10min off heat ratio almost universal? Say I wanted to smoke a whole cut-up chicken, would that still be enough time to infuse the smokey flavor throughout the chicken?

  11. 1:20 You just took me back to one of my worst memories: I was working for a caterer, and I did some of her billing. I happened to see the billing for a very expensive private home-hosted party…and then she required me to serve. I was not a server, and had never filled that purpose, for her. I was the manager of her retail outlet. Whilst serving, I heard what consumers said, and I knew I had to get out.
    She was serving Turkey flesh as several other meats. She was a few days away from being served by the DOJ, but her clients were her gym friends, and her boyfriend’s friends. She believed her daddy and boyfriend would save her—they did.🙃🌸🙃She was involved in a lot of illegal things, apparently. Honestly, it was a big thing, but it was handled very quietly.
