A pastry chef in Paris took the rustic French classic Apple Tarte Tatin and turned it into something beyond elegant. I marveled at the perfect spiral of apples, then I realized there is a kitchen tool that creates delicate ribbons of apple. So I bought it and created my version of this caramelized apple dessert at home. In my recipe I talk about what kind of apples to use, because that matters or you don’t get definition, just mush.
