Do the searing part and then put the beef in a pressure cooker on high for 45 min( using electric pressure cooker not sure how to convert for stove top- don't blow up your pressure cooker), you will end up with just as tender meat but it will lack some of the roasting flavors you can only get from a slow roast, msg or a mushroom umami powder will help to off set tho. Will cut about 4 hours off of this recepie for the sacrifice of some good roasted flavor

I always invite my friends round for a big hearty pie in the autumn. Only kidding, no I don't.
Most supermarket beef is cubed too small. I like to use beef shin and skirt cut into similar sized chunks that chef uses.
