Cream Horns (Cannoncini) with Pistachio Cream

Nothing beats Mama having company in the kitchen 👩‍🍳💫 Today her friend Elena popped over, and the two of them instantly turned into a pastry party squad 🥐🎉 Rolling puff pastry, whipping pistachio cream, giggling like teenagers the whole time 🤭💛

It was pure chaos in the best way—flour flying, sugar everywhere, and laughter that could’ve sweetened the cream all on its own 😂✨ I can’t even count how many times I had to tell them to stop talking and screaming so I could actually film 🤣📹😂 The smell of those cannoncini baking? UNREAL 🤤🔥

And when it was finally time to taste… yeah, I didn’t just eat one—I inhaled it 😅🙌 Their faces when they saw me demolish it in seconds? Priceless ❤️🍰💚

Ingredients
• 1 sheet puff pastry (225 g), thawed
• 1 egg, beaten (for egg wash)
• Powdered sugar, for dusting

Pistachio Cream
• 1 cup shelled pistachios
• 2 cups whole milk, divided
• 3 egg yolks
• ½ cup sugar
• 3 Tbsp cornstarch
• 1 tsp vanilla extract

Method
1. Prepare Pistachios: Boil pistachios 4 minutes, drain, and rub with a towel to remove skins. Blend with ¼ cup milk until smooth, scraping sides often.
2. Make Cream Base: Beat egg yolks, sugar, and cornstarch until pale and foamy. Add to pistachio paste and blend until smooth.
3. Cook the Cream: Heat remaining milk until steaming. Gradually whisk in pistachio mixture. Cook over low heat, stirring constantly, until thickened (do not boil). Remove from heat, stir in vanilla, and transfer immediately to a glass dish. Cover with plastic wrap directly on the surface and refrigerate at least 3 hours.
4. Bake the Shells: Cut puff pastry into strips and wrap around cream horn molds. Brush with egg wash. Bake at 400°F (200°C) for 15–18 minutes or until golden. Cool completely, then carefully remove from molds.
5. Assemble: Pipe chilled pistachio cream into pastry horns. Dust with powdered sugar before serving.
