  4. One of the difference between different BBQ places is the quality of the meat. Franklin’s in Austin use Prime grade brisket. Others might use Choice. Prime grade beef is about 3% of all beef, so it’s in short supply and expensive. The premium marbling sets it apart.

  5. I don't know why this food is taking off so much. It's traditionally slave food. Cheap cuts. Rendered down to almost pulp. A toothless person could eat this shit. I'd rather some cheateuabriand.
