What happens when you spend a full day in Singapore with the team behind one of Asia’s best restaurants? In this YS3Chef episode, we hit the city with the chefs of 3-Michelin-starred Odette: Chef Julien Royer, Asia’s Best Pastry Chef Louisa Lim, and Chef de Cuisine Naka Xiong.
Together, we explore the city’s top food spots—from hidden hawker legends to award-winning coffee and modern French bistros. This isn’t your typical travel guide. It’s a personal, behind-the-scenes look at the flavors and people that make Singapore a true culinary capital.
Food Stops in This Episode:
1) Apartment Coffee – Ranked 6th best in the world, we start the day with Chef Julien Royer over a world-class drip coffee.
2) Zai Shun Curry Fish Head – An under-the-radar hawker gem famous for its steamed fish and traditional curry head.
3) Summer Pavilion – 1-Michelin-star Cantonese fine dining. We go inside the kitchen to learn the art of dim sum.
4) Ami Patisserie – Singapore’s only omakase dessert experience, where Chef Louisa shares her story at this 8-seat Japanese counter.
5) Sing Swee Kee – A local favorite for authentic Hainanese chicken rice—Singapore’s most iconic dish.
6) Claudine – Chef Julien’s modern bistro, where we wrap up the day with wine and a reflection on Odette’s journey.
Whether you’re planning your next foodie trip or just love getting a chef’s-eye view of Singapore, this cinematic tour is your ticket to the city’s best-kept culinary secrets.

Ami patisserie was sick cool. What a location. The chefs which guided you had cool vibe, i like ppl who love good food.
Always love when a new S3 video pops! I could easily watch this if it was twice as long and still love every second 🩷 I’d love to see more drawn out sections of y’all enjoying the food
The chicken rice is neither steamed nor roasted. That's a misnomer. It's either 1) boiled or 2) poached then fried
I LOVE CHEF XIONG
Wonderful to see Melissa in her elite working environment, I taught her in school eons ago and witnessed how she broke from the "safe" and respected path and forged her way in the Chinese cooking space, which was not a very welcoming environment for a young lady initially.
If ur in Singapore skip the arabica beans and go for some old school yakun coffee ha ha
Louisa Lim is hot. is she single ?
wow so great this is mrr chaf that the best
love this series!
Although I have watched this video before but he is talking about Chefs who eat at different restaurants, other there own place, mind you, this is in Singapore, not in NYC, I have worked in some of the best Hotels in NYC, none of the Executive Chefs in these Hotels have ever gone to another hotel to eat with there wife or children, that's the same thing with restaurants, they either eat in there own hotel or restaurant, usually they go home, I'm the same way, why would you go to a restaurant, when you can make it yourself at home, this video doesn't represent Chefs currently in the food service industry, no matter where you are it's a PURE LIE,a made up story.
5:11 whole fish bones and head (trimmings) stock making, steam, add to wok to sear, add hot water. Hot water turns white to release collagen.
Great Zai Shun’s gonna get even more impossible to dine at 😂. Loved this episode!
😂..
great episode! zai shun is really the bomb! on a side note, why does monsieur mercier sound so local haha…
Summer Pavilion has the best pao fan. I liiiive for it! 😍
