Orange Tofu Peanut Satay Superfood Salad ✨🍊
Sticky vibrant peanut satay with golden crispy cubed tofu, zesty orange and avocado combine for the ultimate superfood salad – who wants to try?

This salad just SCREAMS summer to me, it’s filled with a rainbow of colour, tons of fresh gut healthy, gluten-free and plant-based ingredients and it’s ready in less than 20 minutes! And did you see that peanut butter creamy satay sauce… 🌈

Inspired by the brand new Orange Squeeze Kombucha from @remedydrinks (who you know I love), they are my favourite gut-health drink, with no sugar and made with REAL ingredients. This fizzy and refreshing orange kombucha has a bright, bold rush of orange-kissed citrus zing is PERFECT for summer ☀️

Orange Tofu Peanut Satay Superfood Salad ✨🍊
Here’s how to make it:
⭐︎make the satay: whisk together 4 tbsp runny peanut butter + ½ lemon juiced + 1 tbsp tamari soy sauce + 1 tbsp extra virgin olive oil + 2 tbsp thick coconut yoghurt
⭐︎cube 200g tofu and toss with 2 tbsp of the satay. Pan fry or bake till crispy
⭐︎for the kale: roughly chop 80g of kale and massage with ½ tbsp EVOO and salt. Now stir in 1 tbsp of the satay
⭐︎salad ingredients: cook 80g quinoa + chop up 1 orange + slice 1 avocado + chop fresh mint and chive
⭐︎for the dressing: add 2-3 water to the remaining stay until pourable
⭐︎to plate up: add the kale to a large platter (or 2 plates) and top with the quinoa + avocado + orange slices + crispy satay tofu + fresh herbs + some pink pickles + crushed walnuts
⭐︎drizzle over the satay sauce and DIG IN while sipping on an Orange Squeeze
