⭐️DUMPLING STEW – Serves 1

Ingredients

1/2 bag frozen vegetables 12 ounce Great Value broccoli, carrots, cauliflower
1 cup pasta – I used garden rotini Great Value Walmart brand
*Dry spices of your choice, but here is what I used today
1/2 tsp garlic or 2 chopped cloves fresh garlic
1/8 tsp celery salt
1 tsp basil
1/2 tsp turmeric
4 cups water
bouillon of choice, or use extra dry spices. I used 1 Not Chickn Bouillon cube
*Optional Chile flakes

⭐️DUMPLINGS
1/3 cup flower
1/2 tsp baking powder
1/8 tsp salt
1/8 tsp turmeric

In dutch oven add oil and garlic, add water, bouillon and remaining spices. Add frozen vegetables and then pasta. Cook for 2 minutes and then drop in dumplings.

I didn’t use all the dumplings mixture and made a flatbread with the remainder, but you can use all the dough in the dumplings if you would rather. Cook for 8 more minutes and then soup is done. Be careful not to overcook your noodles.

⭐️BAKED BEANS OVER POTATO

1 potato – cook in microwave for 3 minutes, then coat with oil and salt and bake at 400 until done.
1 can pinto beans or make a pot of beans- If making more then double or triple the spices
1/2 tsp garlic salt
1/2 tsp onion powder
2 tsp brown sugar
1 tsp smoky paprika (Spanish)
4 packets ketchup or 1-2 tbs
* optional -1/8 tsp chipotle powder
*optional- 1/4 tsp dijon mustard
1 tsp apple cider vinegar

Add spices to canned beans and let simmer. Add a small amount of water if needed. Pour over baked potato.

I think this recipe would work best if you made a pot of beans and had a lot of bean broth to use over the baked potato.

Optional toppings: green onions, cheese, sour cream, shredded carrots.

  2. I never tried dumplings in soup, I've always been a bit afraid of the texture. But I do love things like ravioli and tortellini in soups, so I should really try it out! Soups is fantastic for low-cost meals, we have it several times a week during winter. Next time I will try dumplings and see what the family thinks!

  3. Those dumplings are also in the Amish community and called rivels. But they aren't as wet as yours were and they get pinched off and spinnered into shapes smaller than the Jamaican ones.

  6. Dumplings only need flour, salt and flour. Mix together : 2 cups of flour, 1/2 teaspoon salt and just enough of water to form your dough( around 2-4 tablespoons). Then roll out like a pie crust. Cut into strips and then cut in pieces about about 2×1” pieces. Drop into chicken broth that has been seasoned with chicken bouillon, chopped onion, sprinkle of garlic powder or garlic salt. As you drop in the dumplings one by one into simmering broth the dumplings will thicken the broth. Let them simmer until you have finished dropping all of the dumplings. Let simmer for few minutes. This can be made with leftover chicken or canned chicken. The rotisserie chicken makes a wonderful seasoned broth. Add in your chicken at the end just to heat through, since the chicken is already cooked. Serve with some cheddar bay biscuits or cornbread. This makes a pot full…enough for six servings at least. If there are leftovers place in refrigerator. This will look like a large mass, but just try to separate as easy as you can…add in a little water and a small amount of milk( If you over salt your dumplings the milk will take some of the saltiness away). If no milk, just add in a little water. I think this is more filling and cheaper. A true southern staple in most homes. You can always serve some kind of vegetable on the side…like a salad of fresh cucumbers, tomatoes and onion with some vinegar poured over them, sprinkled with S&P. Just my opinion in making money stretch.

  7. Hi Michelle, your two meals look yummy. I wonder if one can make dumplings with whole wheat flour. Will it taste as good as white flour? I don't know. Maybe sometime I will try making both. That flatbread looked scrumptious! I know you work hard at your job. Take time to rejuvenate yourself.

  10. Both recipes looked delicious! I often have chili beans over a baked potato. Now I need to try it with baked beans. I like using frozen vegetables. They can save you a lot of money over fresh (unless there is a good sale), and I think frozen takes more fresh than canned vegetables. Thank you for the great ideas, Michelle! Happy Easter!!

  12. Dumplings always extended a meal 🥘 when I was a youngster. Yes, I still eat dumplings but cooked in my slow cooker.
    Baked beans on a baked spud was topped with a little grated cheese and yes it very filling.

  14. What kind of beans do you use for the baked beans. We just get baked beans ready in the tin but I’d like to try making my own. Also I’ve been using garlic granules instead of salt on things that I’d usually put salt on. I get the garlic without any salt added and it works so well. I wanted to reduce my salt intake. I’m still buying the black eyed beans in Aldi since you made the soup on your channel. They aren’t popular and are reduced to 29 cent this week. Win win!!!

  17. If you want to bake a potato fast, stab it, wrap it in a tea towel and microwave for 4minutes. Cooked!. Then pop it in the oven to brown.

  18. You could do Beano Pie: baked beans add onions, mushrooms, or bacon. Top with cheesy mash potatoe and bake till golden. Yum

  20. Not so budget friendly but I love dumplings (made from semolina, egg and little bit of melted butter – some people use salt as well) in my veggie soup. When I put dumplings in my soup I don´t use pasta. I love to cook mungo beans and beluga lentils in my veggie soup to make it more filling. I cook huge pot and eat it for 4 days 🙂
