When it come to oils don’t use olive oil it should not be heated instead use a hight temp oil then your oil won’t burn and you don’t have to worry about it
Maybe I need to change the types of pan I buy because the ones I used are coated and according ton their instructions it says not to place pan on fire without cooking oil in it or it will ruin the coating 😔
If you have to worry about the oil burning before it comes to temperature you're ether heating the pan at too high temperature or you're using oil with a far too low smoke point…
I cook my salmon similar, but I don't add in butter at the end. I use butter instead of oil and the salmon still comes out juicy. Never press down on meats while cooking it. That's how you dry it out, which is why you had to add the butter at the end. Also never turn over a 3rd time, that how your dry meat up. I'm sure it tastes good, but what I see here is more butter than salmon.

Letting fish get to room temperature also lets fish get bacteria. No thanks bud. Who even is this clown anyway??
