  1. If someone from this program wrote the names of the islands onto the map, Porto Rico is incorrectly spelled. It is Puerto Rico. Historically, the spelling Porto Rico was an insult.

  2. So interesting that his restaurant is in such an affluent area. He really made a huge jump from his humble childhood. It's c'est crazy to think that most French have never seen this sophisticated side of Caribbean cuisine!

  3. Looks delicious & I love the stories about the conch & the mangos…adds an extra, personal dimension to the cuisine!
