Shopping List Ingredients:
* 1 lb pipette rigate noodles (or any pasta you prefer)
* 5 egg yolks
* 2 cups grated Parmesan cheese
* 1/4 cup diced parsley
* 8 oz guanciale or bacon, diced
* 1/2 cup pasta water (reserved from cooking pasta)
* AP Seasoning (to taste)
* Black pepper (freshly cracked, to taste)
* 1/2 diced onion

  2. I used to love this meal when I lived in Italy. The Italians worked with would make a huge pot with bread. The bread was different from garlic here in the U.S. It was hard on the outside but really soft on the inside, so you could sort of scoop the pasta.

  3. Bruh, I make this at least once a month in my house. Wife's favorite! It's a bit of a challenge for me because she has Gluten and Dairy allergies but, it gets done!

  4. I make Carbonara often as its one of my faves. Being Italian and learning the traditional way and history I had to laugh at your "coal miners getting coal in the dish" reference.

    There are many differing "histories" regarding this dish, and it looks like you combined two of them together. It was said that coal miners would eat this dish before heading into the mines as it was easy, had few ingredients and quick to prepare. The other that you included is that the flecks of pepper (which there should be a lot of) looks like bits of coal. Not that the miners got coal in the dish. lol.

    Once you add the egg there should be no heat on. Just use residual heat from cooking the bacon. I usually have my egg mixture ready to go before the bacon is done so I can turn off the heat drain some of the fat and then add the egg mixture. That's plenty of heat to create the creaminess that the dish is known for..

    Anyway, love that you're making this dish on the channel and as always enjoyed watching!

  6. I don’t think Carbonara is underrated. I think a lot of home cooks (like me) struggle with getting it right so we only order it in restaurants.

  7. You lost me at truffle!!! The smell of truffle oil makes me wanna throw up!! I hate when restaurants add truffle to everything. I like how you showed your mistakes. Looks good.

  8. Looks delicious! I’ve never seen this type of pasta. It’s interesting with its shape! And I’ve never had carbonara. This is a simple to make pasta that I would like to try. Thanks for the recipe.
