Ingredients:
• 6 large onions, thinly sliced (900-1,000 grams)
• 3 tablespoons (40g) unsalted butter
• 1 tablespoon olive oil
• 1 teaspoon salt
• 1/4 teaspoon sugar
• 2 cloves garlic, minced
• 1/4 cup bourbon
• 8 cups Beef Broth (1000 ml)
• 1 bay leaf
• 1/4 teaspoon dried thyme (or 1/2 teaspoon fresh thyme)
• Salt and pepper, to taste
• 4 slices of French bread or baguette
• 1 cup shredded Gruyère cheese
Instructions:
Caramelize the Onions:
• In a large skillet, melt the butter and olive oil over medium heat.
• Add the sliced onions, salt, and sugar. Stir to coat the onions in the butter and oil mixture.
• Cook the onions for about 30 minutes, stirring occasionally, until they are deeply caramelized and golden brown. (remember to sprinkle in some water to pick up the fond)
• Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
• Pour in the bourbon, stirring to deglaze the pan, and cook for another 2-3 minutes to allow the alcohol to evaporate.
Transfer to Slow Cooker:
• Transfer the caramelized onion mixture to the slow cooker.
• Add the Beef Broth, bay leaf, and thyme. Stir to combine.
• Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Season the Soup:
• After cooking, taste the soup and adjust the seasoning with salt and pepper as needed. Remove the bay leaf.
Prepare the Bread and Cheese:
• Preheat your oven broiler.
• Place the slices of French bread on a baking sheet and broil until lightly toasted.
