I N G R E D I E N T S :

Shells:
40 g Egg Whites
36 g Sugar
40 g Ground Almonds
16 g Ground Pistachios
52 g Icing Sugar

Filling:
100 g White Chocolate
70 g Cream
45 g Pistachios

M E T H O D :
1. Grind pistachios with a bit of icing sugar until finely ground.
2. Sift the fry ingredients together: ground almonds and pistachios and icing sugar.
3. Beat egg whites while gradually adding sugar. Beat until stiff peaks.
4. Fold dry ingredients into the whites, and fold gently until ribbon consistency is achieved (see video).
5. Pour this batter into a piping bag fitted with a round tip, and pipe same sized circles. Use a silicone mat, parchment paper or teflon sheets (whatever works for you).
6. Tap the tray a couple of times to release air bubbles, and let the piped macarons rest until dry to touch (about half an hour).
7. Bake in a preheated oven at 150 C for 9 mins.
8. Grind pistachios until fine powder or preferably paste. Add a tsp of oil to speed up the process.
9. Melt chocolate with cream in the microwave, then add the pistachio paste to it. Stir until combined, and leave to cool to room temperature.
10. After baked macarons have cooled, fill them and enjoy!
