  1. I firmly believe that the big majority of the black american population do it because its a generational trauma that comes from the slavery times.

  2. I worked as a food safety inspector of restaurants and food manufacturing facilities. I would bet my life on 95% or more of salmonella cases NOT coming from undercooked food. But from North Americans horrific inability to be aware of cross-contamination AND lack of understanding how to wash one's hands properly. 1) I have seen COUNTLESS times in restaurants someone in a kitchen process raw chicken. Then go and open a refrigerator / freezer with their hands that just handled RAW chicken. Then go touch other utensils, bowls, plates, operate a doorknob etc… THEN go wash their hands with soap. Meanwhile, they've left a minefield of possible salmonella across the kitchen for other workers (or themselves) to touch later and cross contaminate everything they then touch.

    2) Soap requires a BARE MINIMUM of 22 seconds of full contact with your skin to open the cell walls of salmonella (ideally 30 seconds). 99% of people who wash their hands typically dab soap on their hands, then IMMEDIATELY put their hands under running water and quickly rub their hands together. The soap has had NO time to kill bacteria like this. You MUST apply soap, leave the water alone – lather / rub your hands together IN SOAP for 22 – 30 seconds, THEN rinse for 10 seconds at least. That will remove salmonella 99% of the time. If your skin is touching soap for less than 22 seconds, you are effectively doing next to nothing to cleaning your hands.

    If you touch raw chicken or pork or beef, you MUST wash your hands thoroughly with soap BEFORE you go touch ANYTHING else. Otherwise you will have to keep track of every little thing you touched and properly disinfect it immediately afterwards. And most people will never remember / keep track of all the things they touch with contaminated hands.

  3. Washing chicken is kind of a cultural thing. Most if not all black people wash their chicken and really all meat. I mainly do it to get the juices and stuff off of the chicken that it was sitting in while in the packaging. I grew up being told you need to wash your meat.

  4. What about the people who wash their chicken with soap? Those people need to be arrested.

  5. I run my chicken under water all the time. I like to wash the salt brine they put in prepackaged chicken off. Been doing it for 30 yrs and have never had an issue with the salmonella. Wash your hands and don't turn the faucet on full blast…. Not rocket science.

    Don't be groody clean your kitchen more than once a week! Wash your hands with antibacterial soap with a nail brush and water so hot you almost can't stand it. Sing happy bday twice, and you're golden. Funny enough, my culinary school teacher told me to do that.

    The thing about tomatoes is totally true. Tomato is in the “nightshade” family of plants, making it related to THE deadly nightshade. During much of the middle ages, people could see the resemblance and assumed the entire plant could be lethal.

  8. Yes, end of episode lol. Edit: Also, I LOVE Nicole's tradition fable. I tell that story all the time. Don't do something just because it's tradition!
    Edit edit: Acid will absolutely prevent some kinds of bacteria growth, that's literally why you can pickle things at room temperature safely – you create an environment in which the harmful bacteria cannot survive.

  10. I ocassionally wash my chicken if it’s a few days old and it’s a bit slimey and not in a good way cause i find batter sticks to it better or for searing it tends to give better results to be clear washing it then using paper towel to dry it

  11. Things like chlorox use actual anti microbial chemicals, things that actively denature proteins and kill bacteria, aka poison that kills things on contact. Peroxide actively causes cell walls to rupture by turing into water and free floating oxygen which binds to cell walls and activates a cells natural lysing response. Washing woth soap and hot water doesn't sterilize or sanitize things it litterally just moves the bacterial load around, so you wash first, then sanitize, then wash again with a clean batch of water and a sanitary cloth. Also soap just makes things (like bacteria) slippy so it falls off of surfaces like your skin and pots/pans, then once it dries the much lower bacterial load dies of dehydration when everything dries out.
    If you want to passively sterilize your kitchen I suggest running a UV light for half an hour to an hour like industrial kitchens and food prep places do since UV light actively kills cells (yes even human skin cells though they tend to be hardier)
