WELCOME TO SEASON 4 OF WELL FED! This week we’re embracing the dark side of the Force with a fantastic French Onion Soup in honor of Star Wars: Fallen Order.

YOU WILL NEED:
1/2 Cup Unsalted Butter
4 Onions (Sliced)
2 Garlic cloves (Chopped)
2 Bay Leaves
2 Fresh Thyme Sprigs
4 Shallots
Kosher Salt and Black Pepper (To taste)
1 Cup Red Wine (Or Cooking Sherry)
3 Tbsp. All Purpose Flour
2 Quarts (64 oz.) Low-Sodium Beef Broth
1 Baguette (Sliced)
Gruyere Cheese (fresh grated or fresh sliced)

INSTRUCTIONS:
1) Melt the butter in a large pot over medium heat.
2) Add in the onions, garlic, shallots, bay leaves, thyme, salt, pepper and cok until the onions are VERY soft and caramelized (approx. 25 minutes).
3) Add the wine and bring to a boil. Reduce heat and simmer until the wine has evaporated (approx 5 min.).
4) Discard the bay leaves and the thyme sprigs and add in the flour.
5) Stir the flour into the onions, reduce the heat to medium-low and let cook about 10 minutes.
6) Add the beef broth and bring the soup back up to a simmer.
7) Cook the simmering soup for 10 minutes and then season to taste.
8) Arrange the baguette slices on a baking sheet and sprinkle with the Gruyere cheese (or lay the sliced cheese on top)
9) Preheat the broiler, and then place the baguette slices under the broiler for about 3-4 minutes (until golden brown and cheese is melty)
