Lobster Thermidor (France)
Ingredients
2 whole lobsters
2 tbsp butter
1 shallot, minced
1 tbsp flour
1/4 cup white wine
1/2 cup heavy cream
1 tbsp Dijon mustard
1/4 cup grated Parmesan
Salt and pepper to taste
Fresh parsley for garnish
Method of Preparation
1 Boil lobsters for 10 minutes, then remove the meat and set aside, keeping the shells
2 In a pan, melt butter and sauté shallots until soft. Add flour and cook for 1 minute
3 Pour in white wine and heavy cream, stirring until thickened
4 Add Dijon mustard, Parmesan, and season with salt and pepper
5 Return the lobster meat to the shells, pour the sauce over the top, and broil for 5 minutes until golden
6 Garnish with parsley and serve hot
