Coq au Vin (France)

Ingredients
1 whole chicken, cut into pieces
150g bacon, diced
2 onions, chopped
4 garlic cloves, minced
2 carrots, sliced
2 tbsp tomato paste
1 bottle red wine
2 cups chicken broth
2 tbsp flour
2 tbsp butter
1 tbsp olive oil
Salt and pepper to taste
Fresh thyme and parsley, for garnish

Method of Preparation
1 Heat olive oil in a large pot, brown the chicken pieces, and set aside
2 In the same pot, cook bacon until crispy, then add onions, garlic, and carrots. Sauté for 5 minutes
3 Stir in tomato paste and flour, cook for 2 minutes, then pour in the red wine and chicken broth
4 Return the chicken to the pot, add thyme, and bring to a simmer. Cover and cook for 1.5 hours
5 Remove the chicken and reduce the sauce if needed. Garnish with fresh parsley and serve
