At the Haeberlin family, “three stars” is a family affair. Their expertise and art have been passed down from father to son (or daughter!) for 40 years, making the Auberge de l’Ill in the small village of Illhaeusern in Alsace one of the best dining establishments in France. Three Michelin stars since 1967, a longevity matched only by Paul Bocuse.
Is culinary talent hereditary? To unravel the mystery, 7à8 spent several days with Marc Haeberlin, observing him in his Alsatian kitchen leading a handpicked brigade of 50 employees, and also in Stockholm at the court of the King of Sweden, a fan who doesn’t hesitate to call upon this great French chef for special occasions.
