Welcome to the first installment of our two-part series on the Lion’s Mane mushroom. In this video, I will present a timelapse of the growth process of a Lion’s Mane mushroom from a grow kit, along with some helpful tips. In the second part, I will demonstrate how to cook the mushroom and prepare a vegan steak, complete with steak sauce, pan-fried vegetables, and oven-baked French fries.

Let’s begin with the grow kit setup. The kit arrives in a box. Inside, you will find an instructional card and the Lion’s Mane block already inoculated with mushroom spores. While I am taking it out to show you what it looks like, this step is optional.
Next, we carefully cut open the front along the perforations to make an opening, then place the block back inside the box. You will notice the Lion’s Mane mycelium growing behind the plastic. Using a clean knife, make a small “X” on the plastic, approximately 1 cm long. The size of the cut will influence the shape of the mushroom. I initially made a large cut the size of the opening, but I will demonstrate why a smaller cut is preferable. Spray some water on the plastic to maintain humidity around the cut. Mist once or twice a day. The Lion’s Mane mushroom will sense the oxygen from the cut and begin to sprout.
The Lion’s Mane mushroom is an edible fungus belonging to the tooth fungus group. Native to North America, Europe, and Asia, it predominantly grows on hardwoods. These large, white, shaggy mushrooms resemble a lion’s mane as they mature. Lion’s Mane mushrooms contain bioactive substances that offer numerous health benefits, particularly for the brain, heart, and gut. They have the ability to reduce inflammation and oxidative stress, which in turn lowers the risk of heart disease, anxiety, and depression, while also boosting the immune system. Lion’s Mane can be consumed as a supplement or cooked. It is crucial to keep the mushroom moistened, as it will cease growing without adequate water. As the mushroom enlarges, icicles start forming on its surface, protruding further out and down. This is an indication that it is ready to harvest.
Time for harvest. As mentioned earlier, the large cut caused the mushroom to form wherever there was an opening, resulting in a wide base. A smaller cut would have allowed for easier harvesting by simply twisting the mushroom. These mushrooms bruise easily, which is why they are not commonly found in supermarkets. If you do not plan to use the mushroom immediately, it is best to store it in the refrigerator or in a paper bag.
We have just harvested one Lion’s Mane mushroom, and there is a technique to achieve a second harvest. Open the kit and remove the block, then pull the plastic underneath to expose the other side. Place the block back in the kit, and you will have a fresh side to make a new cut. You can continue this process to obtain additional harvests until the block is exhausted. Typically, after 2 to 3 harvests, the kit will be considered spent, as it will no longer produce mushrooms and will feel progressively lighter. At this point, the block can be used as mulch or added to your compost as a substrate.
