[Music] nearly a decade ago a man’s fantasy became reality in a form never seen before kitchen Stadium a giant cooking Arena the motivation for spending his fortune to create kitchen stadium was to encounter new original Cuisines which could be called true artistic creations [Music] to realize his dream he started choosing the top chefs of various styles of cooking and he named his men the Iron Chefs the Invincible men of culinary skills Iron Chef Japanese kome Nakamura Iron Chef French hiroyuki Sakai Iron Chef Chinese Chen Kenny Chi and Iron Chef Italian masahiko Kobe [Music] kitchen stadium is the arena where Iron Chefs await the challenges of Masters chefs from around the world both the Iron Chef and Challenger have one hour to tackle the theme ingredient of the day using all their senses skills creativity there to prepare artistic dishes never tasted before and if ever a challenger wins over the Iron Chef he or she will gain the people’s Ovation and fame forever every battle reputations are on the line in kitchen Stadium where Master Chefs pit their artistic Creations against each other what inspiration will today’s Challenger bring and how will the Iron Chef fight back the heat will be on if memory serves me right Challengers stepping into my kitchen Stadium mostly represent Japanese French Italian or Chinese cuisine however to expand my horizons and encounter new and more creative Cuisine I’ve turned my eyes toward a style we’ve never featured that is Thai food a popular Asian ethnic food in Japan since the boom a couple of years ago it is said the origin of that boom was a restaurant called Kai in aoyama a trend setting part in Tokyo countless celebrities including Ria miazala Yoko Ono and even Dr Stephen Hawking have enjoyed their Exquisite Thai food [Music] the head chef of this top restaurant would be just perfect for the first Thai Cuisine Chef to step in as Challenger today’s Challenger head chef of Kai in aoyama Tokyo shunji Modica stepped into the field of cooking at age 18 first apprenticing at a Chinese restaurant in the next 10 years he acquired the skills of a Top Chef until his career took an Abrupt and interesting turn the owner of Kai became impressed with morika’s skill and head hunted him as one of the chefs for their opening from the standpoint of food culture I think Thai food is already ahead of Chinese cooking in well in many aspects anyway so my motivation of saying yes was oh that I might be able to expand my potential as a chef you know create my own new style after switching to Thai food murikawa’s Talent started to bloom dramatically his firm background in Chinese cooking and unique ideas earned him the position of head chef in just one year Thai food is an art of spices and herbs some say his dishes are better than those found in Thailand it has been 10 years since he made the switch to Thai food and he speaks of his confidence honestly I think I might be the only japanese-born Chef who really understands Thai food for the first time ever a challenger representing Thai food will step into my kitchen Stadium bringing in the fresh new threat [Music] show us your world of authentic Thai food and take home the win now I’m not just here to make a nice show foreign [Applause] foreign all right entering the stadium the man who declares he’s the only Japanese native Chef who understands what Cuisine from the kingdom of Thailand is all about everyone’s looking forward to seeing morikawa in action today yeah that’s right yes now we’re sending in the kitchen Stadium the nation’s culinary leaders your Iron Chefs Iron Chef Chinese Chen Kenny Chief Iron Chef French hiroyuki Sakai and Iron Chef Japanese kome Nakamura here they stand the Invincible men of culinary skills now please all right Chinese cuisine morikawa going after Iron Chef Chinese and he’s enhanced his father’s Legacy by solidifying his reputation as the nation’s leader in Chinese cuisine this one will be a hotly contested Affair sejuan versus Thai [Music] foreign [Music] [Music] foreign kitchen Stadium welcoming the first Challenger who specializes in Thai food it’ll be Iron Chef chin spicy Sichuan Fair against Challenger morikawa’s heat-seeking Thai Dishes duking it out with pineapples the theme we are set let’s get it on bangagong we are on and a real treat in store for the tasters today the very first Thai Cuisine chef and a highly regarded chef from the trend setting Kai and alyama Challenger morikawa coming in here today and taking on Chan the Iron Chef Chinese the two Cuisines related and that Chinese cooking has had some influences on Thai Cuisine over the past several hundred years and now both men Trucking back down with their share of pineapples from the stand and to tell you what this is a great theme for both of our guests today what a sweet gal she’s been on the charts since her debut at age 17 singer IO Matsumoto uh from 16. okay sweet 16. and a big eater baseball commentator nice to have you here thanks for having me and our commentator Dr Yukio Hattori always a pleasure about being the first representative of Thai food and he said I’m honor but more importantly I’m here to teach you the Excellence of real Thai food because in my opinion The Gourmet Academy is doesn’t give it enough credit maybe even looks down on it but not anymore Academy’s been looking down on Thai Cuisine I don’t know about that we haven’t looked at it that is a fact huh true true and Chan now already slicing up pineapples there while on the other side the 39 year old morikawa looks like he’s got garlic and duck ready for the spices oh yeah we’ve got the creek which means chili pepper and Thai so pre-chifa means red chili pepper okay and the small green ones there they’re called uh bikini okay and they’re actually the hottest chili pepper in the world the translation though I think actually means rat dropping to be taken directions yes yeah I asked Iron Chef uh how he feels serving hot Szechuan after the red hot dish is served by the Challenger and he said I’m not too concerned about it obviously I’m fighting for bright but I’m more concerned about the theme ingredient because it’s not something you’d want to keep eating dish after dish right certainly aware that pineapple dish after dish might not uh might begin to wear thin with the tasters it’s a challenge in and of itself yeah and the Iron Chef can whoa look at this right here on this is Chen’s side and looks like this will bring some heat resist and chop up the red peppers there will I be able to eat that not like that what the Iron Chef was chopping up was red chili pepper and peaking oh it’s all garlic in there oh okay well before we get to that uh the Iron Chef now he’s used the hottest green chili pepper with that red chili pepper it’s gonna be a war of attrition who will be able to stand the heat yeah and as you were saying look at that garlic I’ve never seen so many altogether hope he’s got some mints for the tasters all right back with the Iron Chef frying something it’s like it could be pork I think you’re right all right and without any batter or coating applied to it see nothing there all right Chen working the walk early in this one he’s won his last three battles and if my memory serves me he is 13-2 against Chinese cuisine chips and moriko’s Thai could be viewed as being in the same Cuisine neighborhood see how it goes today and he’s look the rice cooker going on Modi Kawasaki oh yeah I hope that’s Thai rice a little bit drier yeah you’ve got to have Thai rice with Thai food is that your expert opinion yes yes in the rice cooker the Challenger does have newly harvested Thai rice all right thanks Sota okay right I think it was just last month that they started to harvest the new rice and fried rice is called calpod in Thai and think he might want to be offering some fried rice today but I’m also seeing some foie gras here whoa Challenger breaking out foie gras now this is not normally used in Thai food no no they don’t use foie gras sounds good oh it’s an expensive yeah yes I understand how he feels about accepting a challenge from a Thai food expert and with a huge grin on his face he said to be honest I love Thai food I dig that stuff so after the battle I’m going to ask the Challenger if I can taste these dishes he’s a happy camper all right and check out the flammola Chan working the walk early and often oh that’s good it’s a garlic wow through the processor yes the garlic the Challenger hat in the blender weighs one kilo 2.2 pounds I won’t be able to see anybody after this show were you planning to see someone special yeah I’ll tell you Dave it might be better to go straight home afterwards and freshen up I think you’re right I think you’re right now let’s see what Chen’s up to now he put together the pineapples some long onions in there yes I have the ingredients in that Wok toban John red and green chili pepper pineapple spare ribs and long onions all right thanks okay now let’s swing back to the Challenger can I see what he’s got I think it’s Foie Gran eggs I believe that had been strange and I don’t know what it’s for I’m not sure if he’s gonna pan fry these or or steam them it’s kind of hard to tell at this point we have to just wait and see what he does with this he could go either way yes the ingredients the Challenger is combined in this bowl are chicken broth salt eggs and strained foie gras all right thanks and the Challenger here frying some pineapple right here I hope he makes a sorbet oh I love that too doc something akin to a baked apple here maybe for dessert I’m not quite sure what he’s doing to be honest well if not dessert then then some type of main dish process of elimination there and now back on Chen’s side assistant blending some pineapple pieces there oh yeah right that is not a juicer no sure not it is prep work for something else yeah just just give me that juice and he’s got my vote no no complicated dishes keep it simple you know this could be part of a dessert all right now back with the Challenger pineapple and looks like chunks of that filet I believe you’re right yeah okay Challenger Morty cow with that beef and pineapple being combined and now 15 minutes gone yes I asked the Challenger what he thought of an iron chef and his reply was I can’t tell how good he is just by watching TV obviously the food looks good but some of the dishes that look French might not be quite as good as they look when it comes to taste and quality I think I can do just as good if not better and I just hate losing to the Elites in this business wow some fighting words challenging morikawa the temperature starting to rise in this one all right and getting back with the Iron Chef Chinese working some kind of dough maybe I think so all right and right beside it another mix-filled bowl that has pineapples mixed in there okay mixing them together I I think aren’t those pineapples in the glass bowl this is a blended one I I think okay got it now the blend from the processor right right yes the mixture in the Iron Chef bowl is made from Pineapple puree milk evaporated milk and flour thanks okay a pancake I’m not really sure maybe for baking or it could be a pudding of sorts okay and now morikawa unloading this one into small bowl-like containers okay he could be steaming this one here okay containers certainly suggest that as possible now back with Chen oh okay oh you see that okay the mix with the pineapple puree milk and flour cooking it up in the wok there I’ve got no idea about this just have to sit on it for now right wow yeah flowers in there doc any idea where he’s going with it to be honest I think this one will be a dessert yeah you know the the Chinese custard you’ve had that right oh I know yes yeah I think it’s going to be a dessert along the that same sort of same sort of line something very similar to that all right the Iron Chef with that one could be a dessert a dessert yes we have no information so far whether that’s going to be dessert or not but he did tell us that he will have four or five dishes including a dessert he declared he won’t be making fried rice with pineapple because that would be too plain and boring and he wants to be anything but that oh fish oh really oh Challenger side oh hey what is this fish it could be a flat fish oh skate yeah yeah all right flat fish and might be something else in there and now here oh he started the stir fry and that is oil right is it um very low temperature no Sizzle action on that yes the items in the Challenger walk are the ingredients that he had in the bowl a few moments ago beef fillet salts right blocks of pineapple oyster sauce white peppercorns and garlic and just one more confirmation the fish in the container is called skate all right thanks for the confirmation there skate is it okay okay all right now here’s Chan unloading what should be a pineapple based custard okay and he’s going to put them in the molds and then I think add flour over top okay he’s got a tray of ice water there at the ready right that’ll be for chilling them afterwards okay so so this is definitely a dessert right sounds like it’s associated with the underworld it’s really good sounds like pickles yes over on the Challenger side he has a ball which contains eight egg yolks granulated sugar coconut milk and Fresh Cream got it this pot right here definitely all right and laying it down right on the fried pineapples wow I love those pineapples so it’s gonna be like a pudding I guess okay yeah there’s your dessert yeah well like it did pudding and uh like an apple that’s been baked a pineapple the slices have been fried analogy will work right sure I agree okay and courtesy of the Challenger now this still on his side tomatoes in the frying pan and let’s see here getting up close on that I believe that might be miso um some sort of a paste anyway maybe a bean paste yes yeah that uh paste is red curry paste and tomatoes in there all right red curry paste and here he goes all right Thai curry on the way all right red curry and we’re in the Thai language it’s called gampei okay better than I pay and while paint means hot so get ready it sounds like a different gonna have some hot stuff baby exactly oh now check out the Challenger he’s got the hot water at the bottom here okay yes water in there right there so he’s going to be steaming things on top of that right like he’ll put the potatoes in the oven for that effort then light lately steaming anyway I guess so he will firm that one up gently then exactly that’s what looks like he’s doing right here all right close the door and now 30 minutes gone 30 to go pineapple battle into the second half of this one no wow what is this in there yes into that same frying pan he’s now added honey roasted peanuts and I believe palm sugar all right they joined The Fray okay that’s actually coconut sugar okay coconut sugar a bit of sweetness for the curry and let’s see okay here are the pineapples look at them a pineapple curry with tomatoes and peanuts in it oh baby Thai curry kind of surprise looks so chunky not much like a sauce well this is like the initial stage right so but you know to answer your question or to make your observation more clear it will look like a loose sauce later on once they add the soup I see okay Curry dish will be flushed out a little later and now with the Iron Chef here oh okay so that’s prawns rolled around pineapple slices pineapple and prawns combo right pineapple rolled in prawns and then the whole thing wrapped in bacon you know I’ve never had anything like that before but somehow I think this is gonna work yes for this dish Iron Chef Chen is using ingredients from the bowl to the side of him that bowl contains prawns coated with potato starch salt Chinese rice wine pepper and egg whites he is now as you said wrapping pineapple and a combination of the prawns in bacon all right thanks big fella and now let’s sort of try and take stock right here how many dishes does the Iron Chef have how’s he what’s he got going okay now we’ve we’ve got something like the zacos right the dessert one so he’s chilling that one right now right and he’s got the other one that’s using the fried pork without the batter second yeah that one um it’s now being stewed right okay bringing heat to Bear big time there and that’s when it’s going to be quite hot it’s got that peaking stuff in there right it’s got to be real tender by now yeah so this is actually looking more like Szechuan home cooking oh I see zucchini oh The Challengers out of zucchini yes the challenge is added even more ingredients to his Curry now fond of bamboo shoots namplar and the zucchini you noticed right and healthy chunks of bamboo shoes basically is a fancy way of saying chicken broth all right now chin unloading this one oh it looks so delicious look at that it’s just delicious pineapple and pork stew and you know the enzymes in the pineapple break down protein or in this case the pork should go down and through rather nicely it looks like a dish with pork belly blocks they have at a restaurant my neighborhood but I don’t think it’s the same are you sure well let’s call it Sichuan pork and pineapple stew yeah now how about the leaves here that’s a very good question yeah oh those are great okay they’re called mayimako which is it’s kind of a an orange or well we call it bumpy orange bumpy orange okay okay I don’t know the real English name for it but it’s it’s very essential like spices and items in there at least 10 all together yeah all right now let’s see we are back with Chan and looks like he’s fried these things deep fried them bacon rolls pineapple and prawns rolled in bacon and deep fried and I think these would be great with a brew or two sure no let’s take a look at the Challenger he’s uh hammering away on the peaking those are just they’re so hot I may not be able to eat this I mean they’re green in color but they are red hot okay ready hang on is he gonna use all the hottest pepper of them all oh please be me got a monitor where these end up they hit me in the creek oh not enough for me well it’s like miso it’s a fermented soybean okay and looky here oh he’s putting it in pineapples oh he’s using the hollowed pineapples as bowls okay so this is definitely not fried rice no well he’s been cooking Thai rice right so the newly harvested stuff so that’s gonna be for the curry oh okay with curry sauce right right well absolutely if you’re going to have Thai curry you gotta have Thai rice that’s a gift sure Thai rice preference for sure for the curry to be poured on and over it that would be the mo that wouldn’t be now back on Chen’s side another mix here yes yeah the bullet we were just looking at on the other side contains a mix of mayonnaise ketchup condensed milk and gin sounds like a sauce look here throwing them in okay so it’s a sauce or dressing I guess for this and this makes a tie no this is actually iron Chef’s side so this is Chinese oh sorry yeah okay so a mayonnaise flavor for a Chinese dish then sure well you know they do that a lot with prawns right so I’ve seen that before not that far out then no no not at all all right Chen his side and they’ve got some hollowed out pineapples as well right here yes chance I noticed the Challenger using pineapple bowls cut vertically he wanted to do his different did him like this all right talk about stubborn good idea but won’t copy it exactly now about this sauce um calls it Aurora sauce he actually came up with this idea mixing gin and mayonnaise talking about exactly yeah that’s a very sauce okay and completing this one now dish number two is in the books for the Iron Chef right now take a look at the leaves that the Challenger is using here he was just chomping them up just now there you go yeah these they’re they’re actually a variety of a leaf from a coconut tree no really yeah it’s called Uh or baito actually in Thai yeah yeah it adds a nice sweet Aroma to the dish it gets really exotic yeah I didn’t know that yeah it’s a sweet smelling thing sure okay it smells like Thailand I’ve never been there yeah smells exotic yeah I asked Jensen how many dishes you’ll have today and he answered with an embatic five including two desserts the quality could be better he says but challenging new recipes is what a daily double two desserts wow okay ah that one the zakosa oh right right that’s dropping them in right there yeah man alive deep frying up these uh very similar to cubes of pureed pineapples which were in the mix that he made right it’s a custard a pineapple custom last coating the flour right yeah Chan the chill factor he’d ice them down and now deep frying them Fire and Ice being used to make this one back with Challenger Morty Kawa now plating work with this one so he’s got one out of the way working hard with less than 10 minutes left and uh hey is that an NBA logo on his shirt right there no this is the one using the beach Philly right beef and pineapple garlic okay that’s right that’s right used all the garlic he cooked it in there and he dumped it in here right exactly okay a beef fillet and pineapple stew with the strong garlic presents might want to be reaching for the mouthwash after the tasting of the dishes today it’s definitely clear okay we see those leaves all right the buy toy that’s that’s what’s adding the uh that whole Thai Aroma to the to the kitchen Stadium all right now back with the Iron Chef and uh pineapple on both sides of this one right yeah okay filling it with the mix there a la gyoza pineapple juice you could say that yeah come to think of it pineapple acting is the gyoza skin right yeah okay it looks to be coating the pieces with some flour there that’s what he’s doing all right just calling it as I see it there you go yes what sandwiching in the pineapple is ground pork seasoned with soy sauce salt Chinese rice wine and potato starch what’s he doing with the green herbs yeah I see those in there too oh that’s uh [Laughter] the tongue twister okay in Thai language that’s pakchi okay or we just call it coriander in English right now check out the Challenger here he’s coating this with sugar this is like a creme brulee wow do you come across a dessert like this much in Thai Cuisine never this far as I’m you know I’ve never seen it all right not coming at all now also mostly you’ve got some coconut plates too let’s see all right okay and using a blowtorch on the surface of this one the man’s very thorough isn’t he what he’s doing oh no Iron Chef here he’s got the what do you call a pineapple pen right there kerplunk his gyoza style Creations hitting the oil cook and deep frying those puppies up situation substitution Chen using slices of pineapple in lieu of gyoza’s skins what an effort you know he’s doing a lot of frying today no doubt about it a unique gyoza offering coming from the Iron Chef and now the Challenger also deep frying this okay fish right oh okay all right the flat fish had that in place quite a while back but no pineapple yet to be seen in the vicinity right right maybe he’s planning on stir frying the whole thing with some other sauces a little bit later on it looks fine to me just like the way and getting that deep fry job done there pretty quick no that’s a technique that’s very similar in in Chinese cooking right just fry them lightly all right and let’s see if it does turn out to be a stir fry using a combo of a flat fish and Pineapples uh yes it is oh wow oh it looks hot that’s hot red hot I hope the dishes are going to be too hot getting down to it martikawa with the green chilies the hottest in Thailand and bringing the fire to bear on what will bring Fire To The Taste Buds of the panel right they’re not just the green but has the red chili in there as well come tasting time tie in Sichuan dishes the heat will be on and uh where will the tasters be able to catch a break it’s going to be tough in this one and now the Iron Chef looks like he’s onto his hot and spicy finishing kick here there’s something hot yeah tovanjo on the heart of Szechuan cooking Chen ready to rock actually I don’t think there’s any tobanjan in there yet yes the ingredients in the iron Chef’s Walker red chili and garlic all right thanks got it I’m just now adding some ginger all right Chen with red chilly maybe he’ll add those fried pineapple sandwich type things into his son all right we’ll see about that but right now Morty cow the deep fried flat fish joining the pineapple for a stir fry of fiery proportions and didn’t need much time to cook these two items together didn’t do much of them either just Blended them just a few flips then doesn’t need to cook it anymore it looks like and moving them over to the plates unloading for individual servings morikawa finishing with another dish right here wow oh the rice is done oh really Mordecai was Thai rice all right well that’ll make it the uh the Curry on top yes sir see that’s why they call it curry rice curry rice rice and Curry whatever you want to call it Curry will be poured on the rice when it’s served that’s going to be the operative way to go there that’s right right yes now in the Iron Chefs walk he has chunyan garlic sugar Chinese rice wine tobon John chanton soup and pineapple all right pineapples in there already obviously some small pieces more like bits and Doc he predicted the Iron Chef will combine this mix with his gyoza style creation I think that’s how we’re all wind up at the end all right and morikawa now looks to be easing up on the gas just about done over there with all the cooking yeah he’s cooking’s out of the way for him just some finishing touches remain for the Challenger oh speaking of finishing up the pineapple gyoza here more work with the wok pineapple gyoza in the mix and Dublin down on the theme ingredient this looks good if I wasn’t told what was in it now the Iron Chef bringing it to the plates pineapple through and through with this creation pineapple gyoza in a hot and spicy sauce which has bits of pineapple in it Chen digging deep into the Playbook to come up with this one for the battle today pineapple battle and I believe this is the first time we’ve had a theme ingredient that’s a fruit used in a non-dessert battle though there will be dessert dishes coming from both sides so the men able to incorporate pineapples in a series of main dishes and here’s the dessert dish from morikawa using Foie gra in this one right the steam Chowan mushy style one right all right with pineapple on top and now a minute left the final 60 seconds in this time AI versus Chinese battle and there’s the iron Chef’s deep fried pineapple and prawns wrapped in bacon served in a hollowed out pineapple Challenger morikawa a chef who switched from Chinese cuisine to Thai taken it right to the Iron Chef the Chinese in this one morikawa saying he felt limited by Chinese cuisine that he could better develop his potential making the jump to tie and now trying to jump the Iron Chef put his Thai Dishes up for consideration against the Szechuan style offerings of chin Kenichi and we’ll take that right here as a sign that Chen is done on his side as well 15 seconds left both men have completed the cooking of their dishes a unique array coming the Taster’s way of hot and spicy pineapple dishes might be too hot to handle for some we shall see get the water ready the final seconds tipping down and that’s it the pineapple battle is over so are you happy with your dishes today yeah well um I’m not familiar with this kitchen of course no no yeah yeah yeah but you were able to create what you wanted to right visually why yes just visually yeah I think so so do you still think that you can beat the Irish Chef I really want to win you want to yeah how did your dishes turn out today well I don’t use pineapples normally oh really I thought yeah so many dishes I was trying for the first time yeah honestly speaking it was very difficult to do pineapples because they’re so sweet Challenger mordikawa is offering five dishes first Foie gra moose with pineapple sauce the Foie gra in the Moose finds a pleasing harmony with the slight sourness of the pineapple sauce through the white peppercorns topping the dish [Music] second skate and pineapple stir fry the hot flavor of the Chili Peppers is penetrated deep into the pieces of pineapple but the overall flavor is Splendid and the dish is a great representation of real Thai food [Music] third beef fillet and pineapple with fried garlic sauce the pieces of garlic fried to a crisp are a fantastic match with pineapple and provide a finish pleasing to the Japanese palette fourth pineapple and bamboo shoots red curry with the offering served from boats of pineapple a variety of spices and herbs create a complex yet elegant mixture of Aromas and flavors fully allowing the pineapple to present itself the curry sauce is served along with Thai rice just as it should be last is pineapple and coconut creme brulee the caramelized surface and sourness of the cooked pineapple should help ease the hot and spicy aftertaste remaining from the Challenger’s earlier dishes Iron Chef Chen is also offering five dishes first pineapples prawns and bacon with mayonnaise sauce the sourness of pineapples sweetness of prawns and the full flavor of the bacon all go together amazingly well simply put it’s a nice creative starter second pineapple gyoza a dish that perhaps no Chef except Chen would dare to attempt he also used Thai Spices and ginger to go head on at the Challenger the pineapple helps neutralize the hotness of the sauce third pineapple puree here Iron Chef Chinese Chen Kenichi offers a dish that helps refresh the taste buds through amazing calculation he’s gotten the level of sweetness just right a great dish for shifting gears fourth stewed pineapples and spare ribs a wonderful illustration of just how good Chen is at combining different ingredients the sauce penetrating the pineapple pieces draws out new elements of the theme ingredient last is fried pineapple dessert the chewy texture allows tasters to fully appreciate his controlling the level of sweetness keeping it at a minimum sesame seeds are used to accentuate his dessert [Music] foreign the kingdom of Thailand classical Thai stimulating really stimulating I’m sweating already on my nose [Laughter] oh it’s really hot actually I thought the pineapples would ease that but they were just as hot too amazing the spices went just right into the pineapples it has a spicy sting so we have to be careful eating it but the sweetness of the pineapple is quite effective I like the way the garlic is finished in this and how do you say you’ve used garlic in a noble way and it matches very well here with the beef but I’m not sure about the match between garlic and pineapples I love the combination as well I really love this dish it’s great and now the red pineapple curry see how that goes down this one is great you know as you were cooking it I thought Curry and pineapples I don’t know if I’m gonna eat this but yeah I like this one the best and it’s a great dish because it’s easy for me a lay person to understand what Thai food is all about I’m coming to your restaurant yes please yeah sweet and sour pork is about the only dish I can think of for pineapples but this is so mild with coconut milk a very Thai way of using pineapples perfect it’s a pinch hitter going deep good stuff I’m bringing this home with me thank you thank you you’re quite skilled in designing the flow of the courses but in the beef and pineapple dish the pineapples were a bit weak I think as for the curry you could have ventured into creating a pineapple only curry sauce as pineapple is the theme of the day now up the dishes of Iron Chef Chen [Music] I was a bit worried watching you cook this if you pretend this is gyoza you don’t get it but this this is a new recipe when I saw you making this I thought really in my mind but this is so delicious well I’d order this if they had it at restaurants huh this is easy to make yeah not very much delicious really this is what I mean he’s he’s always thoughtful about us you know he cares about us tasters and this puree this tells you that if you had planned it right you could have put this in the freezer for sorbet it could have earned you more points and now Chen dishing out the stewed pineapple and spare ribs this one I would not order at your restaurant stick to the standard Stir Fry at the end you could have added more pineapples after all that’s doing the flavor of the pineapples got coked out I think it would have made the flavor more pronounced and refreshing if you had added fresh pineapple slices to it the shell is crispy and the sesame seeds are definitely effective very nice it’s delicious you know I wanted something sweeter when I ate the first piece but well because I like sweet things if you haven’t already guessed by the looks of me but as I as I kept eating this I started to understand that you you tried to control the sweetness I wish I had more of this when I was a kid wouldn’t be so chubby the Challenger was bold in letting the ingredients speak for themselves wow the Iron Chef used these sourness of pineapples more as a seasoning letting the flavors envelop his dishes well the the approach of the Two Chefs to this ingredient was really quite different it was very distinctly different in fact tasters in the line of fire doing their Duty the verdict when we return Ed to um today going tropical with pineapples but through the Thai and Szechuan spices the heat of the competition evident throughout Challenger morikawa a temperature rising effort boosting Thai cuisine’s profile Iron Chef chin fighting fire with fire of his own who takes it who’s Cuisine reign supreme and even he appears a bit surprised by it iron Jeff Chen pulling it out beating morikawa great showing by kitchen Stadium’s first Thai Cuisine challenger but just not enough pineapple power to topple the Iron Chef all right let’s check the scores now kageyama 1816 Iron Chef Matsumoto 1918 Iron Chip okubo 20 to 19 iron ship Kishi 1917 Iron Chef couple of the scores decided by one point but it’s a sweep and a sweet one at that for the iron ship knew he had to come into this one packing heat and he’s leaving with the win Iron Chef Chinese Chen Kenichi foreign [Music] foreign [Music]

I like Thai food
It must have been fun to be a judge on almost all of the episodes, but sometimes the food just looks like they knocked it out of the park with each dish; this is one of those for me.

What I love about Chen is that no matter what the ingredient is, he acts as if its the first time he's ever seen it and is SOOOOO worried. They'll have like "rice" and he'll be like "oh no… what will I do?!" then of course whip up 8 things that are great LOL.
