I’m raing every celebrity Chef’s signature dish to find out which one’s the greatest of all time for this first episode we’re looking at a dish from half Chef half scientist hon Blumenthal the year was 1992 and years before the world would know him for his three Missin Star Restaurant the fat duck hon embarked on a most noble quest to create the perfect chip after testing everything he possibly could from different potatoes to different oils and temperatures he eventually created what he considers his first original recipe triple cook chips the first cook is to boil the potatoes until they’re basically falling apart the second cook is a fry at low temperature and the third cook is a fry at a higher temperature until they achieve a glass-like crispy crust although it seems really simple this method was a pretty significant Innovation at the time and has now basically become standard practice however looking at the dish itself in my opinion it’s just really good french fries but considering its impact I’m going to have to give Hon’s triple cook chips a b tier rating
