Hello it’s Genie how are you I hope you are well one of my favorite things to do is sit and surf through cookbooks or online recipes and I get on a tangent typically so if I’m thinking about a particular recipe I start doing some deep diving on

Who makes it you know how what do they do and I start comparing recipes and methods and what I typically find is is that I meld a lot of those and make my own end up making my own version somehow one of the things I I won’t do

That with bread recipes because I feel like really good bakers who have written down a recipe I follow that for the most part I’m pretty you know I’m a stickler for the recipe especially on some of the Artisan or specialty breads but on most dishes you know Savory dishes side

Dishes other things like that I add my own flare because I taste a lot through the process and edit and add according to what I think it needs and I think I have a really good palette for for tasting things and knowing you know what this particular dish

Needs so I don’t know if you saw my questionnaire the genie be’s most interesting questionnaire of all time ever in the history of questionnaires anyway one of the questions on there was if I could give a superow to someone what would it be and I said teleporting they

Could fly or you know just be somewhere because here’s the thing it would have to be teleporting because flying could take a while depending on the speed hey get out of there I have a guest and so in light of cooking I’ve decided I’m going to host a dinner party an

Maria my girl Maria gentle whispering because she can bring something Russian I love Russian food when we were in Russia oh my gosh I I just I love food but what I discovered in Russia was also Georgian food and I just went to heaven with the food there

Cookbooks and some of my favorite recipes and how I store them how I refer back to them because it’s overwhelming you know you can Google anything you know um how to make something chicken picata there it is there’s 400 recipes on the internet but are they good and if

Something’s good I print it out CER and I write down any changes I made or or what additions I made so with that being said let me show you some of my favorite cookbooks I know you’re not going to be surprised here more the steward um some of these recipes I’ve

Found don’t have to be as complicated or as exotic as I read here but I’ve done a few things from her cookbooks that I love and ah this one one I’ve had for a long long time you can see it’s it’s got lots of dog ears one recipe I made from here that

Was outstanding for the crab cakes and I opened right to it because of look at that and it and there’s also a recipe for an ioli sauce but I made these crab cakes for my sister-in-law’s baby shower for her first baby and that was golly 200 when was he born

How like that was like 25 years ago so I’ve made this recipe again and again and it is good so this particular cookbook is ordes I did the entire baby shower all out of this cookbook Martha Stewarts or deres handbook that’s not a handbook that’s a goodbook and it’s a good

One but that recipe stood out and I mean two and a half decades later I still refer to it another cookbook that I refer to a lot is I call this the bread Bible the bread Baker’s apprentice and I bought this it’s by Peter Reinhardt um author of crust and

Crumb it’s mastering the art of extraordinary bread and I have learned so much from this book I if you want to learn to be an excellent bread Baker get this book I bought this in Napa California at the CIA The Culinary Institute of America and I have

Learned so much and my faor my go-to recipe this page is so it’s got flow all over it it’s got my my notes on it um look at this it is basically three variations of a white bread but I make my dinner rolls out of this from this

Recipe and I swear by it they are light and fluffy and tasty but I’ll tell you something I told you I don’t mess too much with the recipes of bread one thing I do add to my bread loaves is just a couple drops essence of orange essence of orange it’s hardly

Detectable but it gives the breads something in the background that you you can’t really taste or put your finger on but it’s a fresh not zesty it’s it’s just there so subtly that’s my that’s my secret to my bread to my white bread rolls I don’t do that

To all breads but this book I I have writing throughout notes throughout and I read this like a book because it’s so interesting so highly recommend that book to you so typically I’ll start with picking out a bread recipe but I kind of trust my roles my I I use the the bread

Recipe there and I turn it into dinner rolls and I measure each I weigh each roll it’s 1.75 Oz every roll is exactly 1.75 o I don’t know why probably from kind of a little bit of a science background in making things with wines but I’ve got my scale

I just put it on there every roll 1.7 o it’s the it Cooks perfectly it’s got the perfect crust and it’s got the perfect fluff inside I’ve gone up to 2 oz and that’s you know a good size as well but that’s some most people will only have

One but when you give them 1.75 ounces you know what that turns it they’ll have two or more okay another cookbook that I love is the complete America’s Test Kitchen TV show cookbook and you know look at look at the size of this thing it weighs a ton but they have all the

Recipes up till 2000 through 2019 so I’m sure there’s an update and they break down a recipe and or even a utensil or a tool a kitchen tool a kitchen machine and they tell you which is best and or what method is best and why they really School you on

Methods and products and so I just love reading through this and um you know how to make the best fried potatoes you know something as simple as that but I’m not going to use that for my International dinner party for those teleporting in let me think here

I might do the crab cakes kids I might do the crab cakes from Martha Stewart they are that good now I love French food the master the king of all French food French cooking austa esier this is is the Bible of French cooking right here the sc’s cookbook the Fine Art of

Cookery and what I love is it’s very it’s simpler than you would think it’s not convoluted it’s very simple and pure and great ingredients so if I were going to go down the path of making something French I definitely refer to esier and I think he passed away in oh

This almond sponge cakes individual I mean I’ve got I’ve got all kinds of dog ears on this as well um I’ve made several things from here this is a fantastic fantastic cookbook see my tabs so I may consider that something in here for dessert going through my cookbooks I found this for my

Grandmother yeah my grandmother it says anyone can bake this is from this is from 1928 1928 and it even it’s all in black and white and it shows you have a set of tables the proper way to set a table and it’s got a lot of basic

Recipes and I have this more for sentimental reasons than anything okay now here’s the real deal I have a binder and in this binder is every the recipes that I’ve made and I’ve ripped out of a magazine or printed out or written or typed up and they’re in plastic page

Protectors my sister-in-law got me this binder but because I had so many recipes that I’d printed out and it was just stacks of paper in my cookbook cabinet so she got me this and it took me a few days and I organized my recipes and I’ll show you some of them

But it was still not big enough so I pulled out all the dessert ones and made it separate upside down a separate binder now some of these aren’t in because I’ve made them recently like this one that falls out apple pie this is the best apple pie recipe

I’ve ever made and I’ve made a lot of apple pies and I even have on here fantastic and one of the secrets to this recipe for apple pie is cooking the apples first so this is a fantastic recipe I can’t remember where I got this or how I found

Recipe I just improvise and put all kinds of things in a mushroom you know cook it in a pan put it in the mushroom cheeses Meats breadcrumbs and bake it so good oh this was good chicken saete with a peanut sauce and let’s see maybe this will be a good

Angle okay let’s go I make my own cranberry sauce um for Christmas and Thanksgiving hummus I love making our own hummus because number one it’s easy and it’s so cheap and it’s delicious and there are lots of hummus recipes that you can read about ah this is the one I also love
