Le gratin Dauphinois est un simple gratin de pommes de terre. Une recette française qui a fait le tour du monde par sa simplicité, son côté gourmand et par son originalité. Car oui ce gratin ne contient ni oeufs ni fromage : c’est pour cela que j’ai écris “vraie recette”. Car il n’y a pas de vraie recette du gratin Dauphinois. Chaque famille française à sa propre recette. Ici je vous en présente une qui date de presque 100 ans. Je dépose le beurre entre chaque couche en très petits morceaux…mais vous pouvez aussi ajouter le beurre à la fin (de toute façon il se faufilera entre chaque jour en fondant). Bonne dégustation !

The recipe for gratin dauphinois has always been a subject of controversy, everyone has done it a little in their own way and since its existence here I use a recipe almost 100 years old it is a recipe which is simple, which is quick to make

And which does not require of pre-cooking in boiling milk cut 1 clove of garlic in two then rub a large gratin dish with the garlic clove it is typically French to rub a clove of garlic in gratin dishes before putting them in butter this to help give a subtle taste

Grease the dish with a piece of butter then form your gratin for this you just need to start by putting a layer of potato slices and then add a few pieces of small pieces of butter really very very few! and repeat this operation until you almost fill your gratin dish

You will need to leave a good 3 centimeters starting from the top it couldn’t be simpler as you understand: slice of potato slices then a few small pieces of butter, and so on. all that remains is to add 600 ml of whipping cream (the equivalent in the United Kingdom will be single cream)

Again some people make half cream, half whole milk but we have an excellent result and excellent hold with only the cream Obviously finish with the layer of small pieces of butter (in total you will use around 60 grams of butter for this recipe) cook in the oven at 160°C for around 1h45

Slow cooking will ensure the success of this recipe however something that What everyone generally agrees on is that you should definitely not add an egg to the Dauphinois gratin or any cheese! this would distort the taste of this wonderful French dish

It is a January recipe, it is a perfect recipe for winter with this cold setting in we need to warm up and comfort ourselves with delicious family dishes like this one is a creamy and melting dish, a meal without meat and which remains very light whether for lunch or dinner

  5. OUI !!! Le Gratin Dauphinois ne comporte AUCUN fromage. En Haute-Savoie et ailleurs en France, les cuisinières en ajoutent mais ce n’est pas la Recette de base authentique. Bien-sûr,c’est toujours bon,mais l’ajout de fromage « empêche » de déguster la saveur pure de la Pomme de Terre cuit dans sa crème obtenue par cuisson au four car le goût du fromage dominera et masquera cette finesse de goût.
