Have about a five or six pound chicken here that I just had my butcher cut down and make uh take out the backbone then you’re just going to lay it flat just like that you can do it at home if you want but it’s a lot easier

Just to have them do it so what I’m going to do here just Pat it down to get all the moisture off I’m going to Salt and Pepper it a lot you add a lot of salt a lot of pepper like this and add some pepper

Perfect now over here we’re going to add about 2 tbsp of butter and a little bit of olive oil as well just add olive oil so we don’t burn the butter but we want the flavor of the butter all right so quick rinse of that make sure it’s all nice

Melted like that we’re going to let it get really hot cuz we all we’re going to do is we’re going to sear this chicken so let’s go ahead and turn this over and do the same with the other side you can see cut down the backbone just like that all

Right that move the skin over a little bit okay throw this away make sure you throw this away we go salt and pepper on it again then we’re going to go ahead and put it in here we’re just going to sear it on both sides get nice and brown and

Brown only takes about a minute or two now I’m just going to do it with the leg flip it over just like that beautiful all right another minute or so all right so now the chicken’s almost over just going to to glaze the pan a little bit with some white wine and also

I’m going to put some capers in it going get a little bit of you want that brininess of the Capers you’re going to put some capers in there just a few it’s going to add a lot of saltiness and brightness to it so now over here

We’re going to make a like a glaze for it do a Dijon mustard glaze put this in there do about a third of a cup I’m going to mix it with some olive oil a little bit of wine and some herbs it’s going be really

Good all right so now we have about four cloves of garlic that we’re just going to put in here that we already minced up we’re going to go ahead and add some fresh Chim some fresh chime here now if you don’t have fresh Chim you can use uh dry

Time as well but I like the freshness the fresh stuff add that in here just like this going to add some salt and some pepper make sure you add a lot of seasoning so some pepper so we’re just going to mix it up we’re going to slowly dressle some olive oil

Add some scallions to that too that’s a few got two scallions and we’re going to put it with some Pinko have so much flavor just like this put them on here love Pinko it’s a Japanese breadcrumb but it’s so good see just like this make sure you get everything in

Here great perfect now we have our oven preheated at 400° go ahead and pop this in there here go open the door so now in it goes let this cook until it’s all the way through all right there it goes all right all right so it’s been about 30

Side up just around here just like that so I have about two Tomatoes just like this them up like just going to go and just put them around let them cook through it’s finishing up cooking going to pop it back in the oven and then it’s almost

Done all right so they the chicken’s all done the tomatoes are all nice and kind of brown on the top so we’re going to go ahead and take this out see how it looks oh my God it’s heavy look at that beautiful a nice French roasted chicken I hope you like it
