This video was included in a lecture I held on October 14, 2014 at the Willem de Kooning Academy in Rotterdam. As part of a research project on food, biology and behaviour, initiated by designers Susana Camara Leret and Mike Thompson, I connected Thomas Hobbes’ famous 1651 treatise ‘Leviathan’ as one of the earliest social contracts to the necessity to develop a new kind of social contract with the huge population of microscopic organisms in the human body. As part of Hobbes’ ‘Kingdom of Darkness’ I added this video: how to eat the vulnerable Ortalan, and how some powerful French politicians (Alain Juppé, Jacques Lang) hail the outstanding taste and scent of this tiny bird.

  5. Hope they get a bone sideways in their fat neck. It’s amazing at all of the things we can learn about daily that completely comes out of left field. We could live 200 years and still be learning. The French really love their food, foi gras (duck liver). Ducks and geese are force fed a fatty corn substance through a tube down its throat in a process called “Gavage”large amounts of fat are deposited in the birds liver, causing it to grow to ten times its normal size. They don’t allow the bird to move, it’s put into a cage that when it grows it actually grows up against the cage so tightly that the cage deforms under the pressure. When it’s ready for harvest, it is removed and the butcher slices the birds throat and immediately puts in in a tub of boiling scalding water for awhile to make plucking easier to do. The bird is still alive while it is in the scalding water.

  10. Had it several times in South America, there are no stupid quarrels about it's consumption down there. It's delicious, and it stays on your pallet for hours. Would recommend.
