Smoked Red wine Leg of Lamb

Bottle Red Wine

15 cloves garlic

Red Wine Gravy
Marinade from lamb
1 Shallot
6 cloves garlic
1/4 c flour
1/4 c butter
Salt
Pepper
1/2 – 1 tbs powder beef bullion

Smoked corn on the cob
4 ears of sweet corn, shucked
4 tablespoons salted butter, melted
½ teaspoon garlic powder
¼ teaspoon parsley
⅛ teaspoon salt
⅛ teaspoon black pepper
⅛ teaspoon onion powder

Spicy Chorizo Sausage Stuffing
Corn bread
1 1/2 c all purpose flour
2/3 c sugar
1/2 c Corn Meal
1 Tbs baking powder
1/2 rsp salt
1 1/4 c milk
2 large eggs lightly beaten
1/3 c veg. oil
3 Tbs butter

Remaining Stuffing ingredients :

1 cup cranberries
¼ cup Captain Morgan Spiced Rum
1 ½ pounds Chorizo Sausage or your favorite sausage casings removed
2 cups Yellow Onions diced small
1 ½ cup Celery Hearts diced small
1 ½ cup Carrots diced small
1 ½ tablespoons Fresh Sage chopped
½ tablespoons Fresh Rosemary chopped
1 ½ tablespoons Fresh Thyme chopped
2 tablespoons Garlic chopped
4 to 5 cups Corn Bread crumbled
2 cups Granny Smith Apples skinned and diced small
¼ cup Fresh Parsley chopped, plus 2 tablespoons for garnish at the end
1 cup Roasted Chestnuts crumbled
½ pound Ham diced small
Salt and Pepper to taste
1 cup Buttermilk or stock

Cranberry Sauce
2C Orange Juice
Orange zest of 1 orange
2 12oz bags Cranberries
2 C Sugar
Siracha
Salt
Pepper
1/4 c Grand Marne

Roasted Garlic Mashed potatoes

Extra-virgin olive oil, for drizzling
1 head garlic, top sliced off
4 lb. Red Bliss potatoes, peeled and chopped
Kosher salt
1 1/2 sticks butter, melted
1 c. heavy cream, warmed
2 tbsp. balsamic vinegar
1 tbsp. chopped fresh parsley

let cool-cold)

Green bean casserole bundles

1 c. cream of mushroom soup
1/2 c. milk
1/2 tsp. soy sauce
1/4 tsp. freshly ground black pepper
2/3 c. French’s fried onions
3 1/2 c. trimmed green beans, blanched and cooled
1 package bacon

Apple and squash soup (Starter)

1 2- to 2 1/2- pound butternut squash, peeled and cut into 1 1/2 inch cubes (about 4 cups)
1 large apple, peeled, cored and cut into sixths
1 medium yellow onion, cut into sixths
2 tbsp olive oil
1 tsp kosher salt
1/2 tsp freshly cracked black pepper
1 garlic clove
4 sprigs thyme
1 bay leaf
4 c home made chicken broth

Pumpkin brûlée (Dessert)

6-7 Mini Pumpkins
2 Cups (500g) Heavy Cream
1 Cinnamon Stick (1/2 tsp ground cinnamon)
5 Cloves (1/4 tsp ground cloves)
¼ inch Ginger
⅙ tsp Ground Nutmeg
1 Vanilla Bean or 1 tsp extract
½ Cup White Sugar
⅙ tsp Salt
5 Egg Yolks
