Ingredients:
5 tbsp unsalted butter
4lbs Onions (your choice)
1 tsp salt, plus more to taste2.25 qts beef stock (.25 reserved for slurry)1 C dry white wine (not sweet)1 tbsp dry sherry1 tbsp cornstarch
1 tsp black pepper
1 bunch of thyme8 to 12French bread (sliced)2 cups grated Gruyère cheese
Recipe:
1. Add butter to a Dutch oven
2. Add onions and salt then cover and cook for 5-10 mins.
3. Uncover and continue cooking until onions are dark golden brown. This should take around an hour.
4. Deglaze the onions with wine and sherry. Cook down until the wine is reduced by half.
5. Add stock and season to taste. Cook for 15 more mins. If the soup is still too thin, mix 1 tbsp with .25 cup of cold reserved stock. Add to the soup and bring to a boil.
6. Turn on broiler.
7. Put soup on an oven/ toilet safe bowl or crock. Add toasted French bread and Gruyere to the top of the soup.
8. Broil until cheese is melted and golden.
9. Eat!
