This is a French twist on the classic Japanese dish, sanshoku-don (three-course rice bowl)!

1/4 onion
1/4 carrot
1 clove garlic
Black pepper to taste

1 bay leaf
5 g stew roux
100 ml red wine
50 g canned tomatoes
★Marinated mushrooms
2 mushrooms
1 eringi mushroom
1/6 of an enoki mushroom
5ml white wine vinegar
30 g olive oil
salt to taste
Pepper to taste
★Sauteed spinach and almonds
1 bunch spinach
A pinch of almond slices
10 g butter
Salt to taste
A pinch of pepper
★Herb pilaf
100 g rice
A pinch of bouillon
Water to taste
1/2 sheet dried bay leaves
10 g unsalted butter
1 sprig each of herbs (Italian parsley, chervil, etc.)
