Cheffe* Carolina Sanchez, born in Cuenca, Ecuador, is co-owner of the 1-Michelin Star Restaurant Íkaro, in Logroño, Spain, as well as of the Quito-based Kriollo, where she explores deeper with the ingredients of her homeland. Besides that, Sanchez is also judge in Masterchef Ecuador, and her sympathy caught me during the interview, where we talk about her career, the surprise with Michelin, her challenges as a woman in the world of fine dining and also her perceptions about Ecuador and Spain.
*We deliberately chose to use the term CHEFFE (feminine form) in spite of CHEF (masculine form), as it is the current use in the French language – from where the word originates – and to highlight the role of women in a milieu where they tend to be an exception. And that is what the Series Women of Gourmet is about.
