Beef Wellington is a classic British dish that features tender beef fillet wrapped in puff pastry and baked to perfection. Here’s a recipe to guide you through the process:
Ingredients:
800 grams beef fillet (whole piece)
Salt and pepper to taste
2 tablespoons vegetable oil
2 tablespoons Dijon mustard
500 grams puff pastry, thawed if using frozen
8-10 slices of prosciutto or Parma ham
200 grams mushroom duxelles (finely chopped mushrooms cooked with onions and herbs)
2 eggs, beaten (for egg wash)
Flour for dusting
Instructions:
Preheat your oven to 200°C (400°F).
Season the beef fillet generously with salt and pepper on all sides.
Heat the vegetable oil in a large skillet over high heat. Sear the beef fillet on all sides until it is nicely browned. This step is to seal in the juices and add flavor to the meat. Once seared, remove the beef fillet from the skillet and let it cool completely.
Meanwhile, spread a clean surface with a dusting of flour. Roll out the puff pastry to a rectangle large enough to wrap the entire beef fillet.
Spread a thin layer of Dijon mustard evenly over the surface of the beef fillet.
Lay the prosciutto or Parma ham slices over the mustard, ensuring they completely cover the beef fillet.
Spread the mushroom duxelles evenly over the ham-covered beef fillet.
Carefully lift the puff pastry and wrap it tightly around the beef fillet, ensuring all sides are sealed. Trim off any excess pastry.
Place the wrapped beef Wellington on a baking sheet lined with parchment paper, seam side down.
Brush the surface of the pastry with beaten egg wash to give it a golden color when baked.
