Ingredients:
1. Olive oil
2. Breadcrumbs
3. Large shrimps (about 20-25), peeled, deveined, with intact tails
4. Lemon salt (1 tbsp maldon salt & zest of two lemons)
5. Kosher salt
6. Garlic compound butter (3 sticks unsalted butter at room temperature, 5-6 garlic heads, one fresh garlic clove grated, Italian parsley, curly parsley, kosher salt)
Process:
1. Pre-heat oven to 400°F. Cut garlic heads in halves and place them on aluminum foil. Drizzle the garlic with olive oil and season with salt. Seal the foil into a bag and then place it in the pre-heated oven (for 45-90 min, till tender).
2. Squeeze the roasted garlic onto a tamis (fine mesh sifter) and press with plastic bench scraper to pass through tamis. This will make a very soft purée and will filter any garlic shells.
3. Finely chop Italian and curly parsley.
4. Place the unsalted butter at room temperature in a bowl. Add salt, puréed roasted garlic, parsley, and mix with spatula. Refrigerate.
5. Place maldon salt in a pestle and morter with zest of two large lemons and mix together to make lemon salt.
6. In an oven proof tray/pan, drizzle thin layer of olive oil. Sprinkle a layer of bread crumbs. Cut shrimps in half and fold on themselves and place in the pan with tails pointing upwards and in the same direction. (You can just layer the shrimps in a single foil on the pan to make it easy) Sprinkle another thin layer of breadcrumbs. Cut the hardened scampi butter with spoon and put on the shrimps. Put in the oven under broil for 2-3 minutes with frequent checks to avoid burning of the shrimp tails.
7. Remove from the oven and sprinkle the lemon salt and drizzle with lemon juice.
