Ingredients:
Potatoes (2 to 3 medium-sized)
Vegetable oil (for frying)
Salt (to taste)
Method:
Start by peeling the potatoes and rinsing them under cold water to remove any dirt. Pat them dry with a kitchen towel.
Cut the potatoes into even-sized sticks or strips, about 1/4 to 1/2 inch thick. You can also use a French fry cutter if you have one to get uniform shapes.
Place the cut potatoes in a large bowl of cold water and let them soak for about 30 minutes. This will help remove excess starch and make the fries crispier.
While the potatoes are soaking, heat vegetable oil in a deep fryer or a large, deep pot. The oil should be at least 2 inches deep. Heat the oil to about 325°F (165°C).
After 30 minutes, drain the potatoes and pat them dry with a kitchen towel to remove any moisture.
Carefully add a handful of the potatoes to the hot oil, making sure not to overcrowd the pot. Fry them for about 4 to 5 minutes or until they turn pale golden. Stir occasionally to ensure even cooking.
Once done, use a slotted spoon or a spider skimmer to remove the fries from the oil and transfer them to a paper towel-lined plate to drain excess oil.
Increase the heat of the oil to about 375°F (190°C). Return the partially cooked fries to the hot oil in small batches and fry them again for another 2 to 3 minutes or until they turn golden brown and crispy. This second frying will give the fries their desired crispiness.
Again, use a slotted spoon or a spider skimmer to remove the fries from the oil and transfer them to a paper towel-lined plate. Season them with salt immediately while they are still hot.
Repeat the frying process with the remaining batches of potatoes until all the fries are cooked.
Serve the French fries hot and enjoy them with ketchup, mayonnaise, or your preferred dipping sauce.
