Today I’m cooking a traditional French recipe: Duck a l’orange.
It’s even better on my wood fire in the forest.
Here is the best duck recipe to make at home!
For the fragrant rice:
-Cook the basmati rice for 15 minutes with fresh ginger, garlic and bay leaf.
For the duck with orange:
-Slightly slit the skin of the duck.
-Put the duck skin side down on a hot pan.
-Cook for 5 minutes on each side and then remove.
-In the same pan, heat the sugar until it burns slightly.
-Deglaze with apple vinegar.
-Flambé the sauce with a little cognac.
-Add a glass of veal stock.
-Cook for 5 minutes and then add the orange slices and some zests.
-Coat the duck in the sauce for 2 minutes.
-Arrange the duck with the rice, the sauce and the orange piece.
-Add a few spring flowers for decoration.
