Ingredients:
1 kg Duroc French Shelving (2.2 lbs)
Salt
black pepper
olive oil

Some smoked bacon
3-4 bay leaves
1 onion (about 100g / 3.5oz)
2 red onions (about 100g / 3.5oz)
1/2 celery
2 carrots
2 celery stalks
1 tbsp whole black pepper
10 carnations
5 allspice
nutmeg
1 tbsp apricot jam
1 tbsp balsamic vinegar
100 ml vegetable broth (⅓ cup) 👉

Bake: 200°C / 392°F 35 minutes on top/bottom heat
