During colder months, I cook this hearty lentil soup almost every weekend as I believe this supercharged soup helps keep my immunity up. It tastes great and it is my girl’s favourite soup! Do me a favour and cook this soup this weekend!

Ingredients

Lentil soup 🥣
1/2 tablespoon olive oil
1 large onion diced
5 celery stalks diced
2 carrots diced
1 potato diced
3 minced garlic cloves
1 cup dried French lentils rinsed
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon basil
2 tablespoons tomato paste
1 can of tomatoes (400g, 14 1/2 oz)
3 cups vegetable stock
3-4 cups water
Salt and pepper
1/2 lemon juice
Optional parsley finely chopped

Garlic bread🥖
French baguette
2-3 tablespoons butter
1-2 cloves of garlic minced
chopped parsley
salt and pepper
