Make this classic gourmet French onion soup in your own kitchen. It is delicious, easy to make and one your whole family will enjoy.
Ingredients
1.5 Pounds yellow onions
1 cup dry red wine
4 cups low sodium vegetable broth
1 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoon all purpose flour
1 French baguette
1/2 cup grated mozzarella cheese
1/2 cup grated pepper jack cheese
3 tablespoons olive oil (divided)
4 sprigs fresh thyme
4 sprigs fresh parsley
7 springs fresh chives
2 cloves garlic
Step 1: Wash, peel and slice onions
Step 2: Heat Dutch oven on medium low heat and add 1 tablespoon olive oil
Step 3: Add onions to pot and stir every three minutes until onions caramelize about 40 minutes then add minced garlic
Step 4: Use 1 cup of dry red wine to deglaze pot and let the alcohol cook for 10 minutes
Step 5: Stir in 2 tablespoons all purpose flour and cook for 10 minutes
Step 6: Add 4 cups vegetable broth, fresh thyme and parsley and cook covered for 10 minutes
Step 6: Remove cover and cook for 10 and additional 10 minutes
Step 7: Slice baguette and place slices on a baking sheet
Step 8: Drizzle two tablespoons olive oil over bread and broil in the oven for 5 minutes.
Step 9: Mix together 1/2 cup grated mozzarella and 1/2 cup pepper jack cheese
Step 10: Remove soup from heat and fill two ramekins, leaving 1.5 inch at the top.
Step 11: Place baguette slices toasted side down on top of soup
Step 12: Cover bread completely with the grated cheese
Step 13: Place ramekins on a baking sheet and place under the broiler 5 minutes.
Step 14: Remove from oven and enjoy!
