Puducherry Bouillabaisse
Preparation time 10 minutes
Cooking time 15-20 minutes

Ingredients
½ tbsp Oil, तेल
1 medium White onion, chopped, सफेद प्याज
1 small Carrot, peeled, chopped, गाजर
½ inch Ginger, peeled, chopped, अदरक
2-4 Garlic cloves, chopped, लहसुन
1 Green chili (less spicy & chopped) हरी मिर्च
1 fresh red chilli, chopped, लाल मिर्च
1 tbsp Tender Coriander stem, chopped, धनिया के डंठल
Salt to taste, नमक स्वादअनुसार
2 medium Tomatoes, chopped, टमाटर
A pinch of turmeric powder, हरी मिर्च
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
12-15 no Shrimp, झींगे
200 gm Basa fish, cut into big pieces, बासा मछली
8-10 no Clams, शिम्पी
2 Bay leaf, तेज़पत्ता
1 Star anise, चक्रफूल
2-3 cups Vegetable stock, वेजिटेबल स्टॉक
½ Potato, boiled, grated (for thickening) आलू

For Garnish
Coriander sprig, धनिया पत्ता

Process
In a shallow pan or kadai, add oil, once it’s hot, add onion, carrot and cook until the onion sweats.
Add garlic, ginger, green chili, fresh red chili, coriander stem and saute it well.
Add salt to taste, turmeric powder, degi red chili powder and saute.
Add tomatoes and saute it for 2-4 minutes on low flame, add shrimp, basa fish, clams, bay leaf, star anise, vegetable stock and mix it very gently.
Cover it with the lid and let it simmer for 7-8 minutes or until the clams are opened.
Once the clams have opened up, add potato for thickening.
Once stew gets thickened well, transfer it to a serving bowl or plate and garnish it with coriander sprig.
Serve hot.
