I saw a video years ago over on @Roots and Refuge Farm where Jess made some sweet potato hash for her family – for breakfast. And more recently another take on it by Becky over ​@Acre Homestead. I wanted to give it a try tonight, as a quick and easy dinner meal. I started by browning up 1/2 of a pound of sausage, cooked up some onions, seasoned and tossed in some sweet potato chunks. It then went off into the oven to bake until it was just about done. I removed from the oven and added four eggs to a little well, and tossed it back into the oven. Hopefully this video will inspire you to try something different with all those sweet potatoes I hope you grew in your garden this year ♥
