French Onion Grilled Cheese
Sweet Gourmet Style

4 T unsalted butter
2 large Vidalia onions, peeled, halved, thinly sliced and caramelized.
1/2 jar of Stonewall Kitchen Roasted Garlic Onion Jam (SG)
Kosher salt and black pepper
4 oz Gruyere cheese, grated (SG)
4 slices bread, cut no wider than 1/2 inch thick

In a large skillet over medium high heat, melt 2 T butter. Add the onions and season with salt and pepper. Cover and cook, stirring once or twice until the onions are softened, 3-5 minutes. Uncover, reduce heat to medium-low and cook, stirring occasionally until deep golden brown, 20-25 min. If onions look dry, add a few T of water. Transfer the onions to a medium bowl. Add 1/2 jar of Roasted Garlic Onion Jam. To prep, place 2 slices of bread on work surface and scoop half of the onion mixture onto each. Sprinkle with the cheese evenly over each slice. Top with the remaining slices of bread and press down gently. Melt 1 T butter in the skillet over medium heat. Add the sandwiches and cook until the bottoms turn golden brown, 3-4 minutes, reducing the heat to prevent toast from darkening too quickly. If needed, add remaining 1 T of butter, flip sandwiches, press down and cook until the cheese is melted and bottoms turn golden brown. Enjoy!
