I met with Chef Francois Mermilliod of Bar-A-Thym restaurant to learn how to make his version of Potato Gratin where he uses one of my favourite European cheeses – Epoisses! The creamy, pungent cheese certainly elevates the dish to the next level and it’s no wonder some people would simply order a whole portion for themselves at his restaurant!

Here’s the recipe to make it yourself at home:
Ingredients:
1 kg Potatoes
500ml Cream
250ml Milk
250g Epoisses Cheese

Method:
1. Wash, peel and slice potatoes
2. Soak potatoes in water
3. Bring Milk and Cream to a boil and lower heat
4. Blend in Epoisses cheese to milk and cheese
5. Pour cheese mixture to potatoes
6. Bake for 30 minutes at 190 degree celsius
