Gravlax is an acient Scandinavian Technique for curing fish, it consists by curing Salmon using equal parts of salt and sugar.
ingredients for 2 people:
– 250 g of boneless, skinless fresh salmon.
– 200 g of salt
– 200 g of sugar
– 1 grated beetroot
– The zest of 2 lemons
– 50 g Sumac
– 100 g of Fetta cheese
– 3 tablespoons of Cottage Cheese
– 8 cherry tomatoes
– 1 Cucumber
Sauce:
– Lemon thyme
– French thyme
– Toasted sesame seeds
– a drizzle of olive oil
– a pinch of Fleur de Sel
