I love food projects and experimenting in the kitchen. Lacto fermenting tomatoes is one of those projects, and making ketchup from those fermented tomatoes is on of those experiments. I don’t like ketchup, but this ketchup made from scratch with fermented tomatoes I can go with!
Plus, this homemade ketchup (tomato sauce) can be a base for bbq sauce, sauce for fish or pasta.
Ingredients for the lacto fermented tomatoes:
2 10 oz containers cherry tomatoes
3 cloves garlic
1 sprig rosemary
Fine seal salt
Filtered water
For the ketchup:
1 batch fermented tomatoes plus half the brine
1 shallot
1/4 c apple cider vinegar
1 tbsp granulated sugar
Pinch kosher salt
