Vegetable Au Gratin
Ingredients:
Corn: ½ cup
Broccoli: ½ cup
Carrot: ½ cup
French Beans: ½ cup (chopped)
Onion: 2-3 tsp (chopped)
Capsicum: 2-3 tsp (chopped)
Palak: 1 cup
Maida: 2 tsp
Milk: 300 ml
Garlic: ½ tsp (chopped)
Black Pepper Powder: ½ tsp
Oregano: 1½ tsp
Chilli flakes: 1½ tsp
Sugar: 1 tsp
Cheese: 3 cubes (grated)
Ghee: 2 tsp
Butter: 2 tsp
Salt: as per taste
Method:
1. In a boiling hot water add corn, broccoli, carrot and french beans. Then add salt. Cook it for 3-4 mi nutes. Now transfer the vegetables in the juice strainer.
2. In the pan add butter once it heated add chopped garlic and saute it for 30 second. Now add chopped onion and saute it for a minute. Then add capsicum and Spinach. Cook it for 2 minutes. Then add blanch vegetable and mix it well. Now add oregano, chilli flakes, black pepper and salt. Mix them well. Cook for a minutes. Then transfer the vegetabels in the bowl.
3. In heated pan add ghee, maida and roast it for 2-3 minutes on low flame. Then add milk and stir it continuously. Prepare lumps free mixture. After that add chilli flakes, oregano, salt, sugar. Mix it well. Grate the cheese in it, mix it well. Cook it for 2-3 minutes on low flame. Stir it continuously. Your creamy white sauce is ready.
4. After that add the vegetables in the white sauce. Mix it well. Cook it for a minute.
5. Now transfer it in the baking tin. Grate some cheese on the top of and sprinkle some chilli flakes and oregano over it. Then bake it in the pre heated oven for 10-15 minutes on 180°C .
6. If you want to bake it in the kadai then bake it in the pre heated kadai for 15-20 minutes on a low to medium flame until the cheese melt properly.
