Yucca is the Central and South American name for the Cassava plant — well known and used in many dishes in the Caribbean… Many Italians make Gnocchi with peeled, boiled, and mashed potatoes, however, we decided to experiment by substituting cooked Yucca for potatoes. The result of cooking this fresh-made Gnocchi from Semolina flour with mashed Yucca, egg, extra-virgin olive oil, sea salt, and warm water, was fantastic! Garganelli is a type of egg-based pasta formed by rolling a flat, square noodle into a cylindrical shape. Garganelli resembles ribbed quills with points at both ends. We also made Garganelli from scratch — and tossed the cooked two kinds of pasta with our homemade Pesto Sauce and rehydrated sun-dried tomatoes — that was minced — and served the pasta with homemade Chicken Saltimbocca and Broccoli Rabe with garlic.

My dad came to the Capital District from Sicily, Italy, in 1947, after our Italian and Jewish Family associates, the OSS, and the US military overthrew “Ethnonationalism”, Fascism, and Nazism, in America and Europe… Our Creole (Caribbean English, French, Irish, Italian, and Spanish) mom served in the Army Security Agency (ASA) aka Signals Intelligence (SIGINT), in Frankfurt, Germany, post-WWII. She brought with her a love for Western and Eastern European cuisine…
My travels in Münich, Germany, and in the Algarve of Porches, Portugal, enhanced my passion for European cuisine. However, my mentor Sam Rosenberg, Esquire, introduced me to Kosher foods and kosher-style delis in the late 1980s… European food is still my favorite cuisine.
