Crab cake recipe- modified for the number of leftovers
1 pound of crab or fish
1 egg
About ⅓ cup of fresh breadcrumbs ( fresh makes a lighter fish cake, and commercially made breadcrumbs contain a lot of additives and preservatives)
1 tbsp of Dijon mustard
¼ tsp of tabasco
1-2 tsp of fresh lemon juice
Fresh parsley
Mix the ingredients together, form into patties and bake on a cookie sheet at 350 degrees for about 10-12 minutes. Alternatively, you can cook them in a frying pan with about a tablespoon of olive oil until browned on both siides.
