SHELLS

– Italian meringue:
250 g sugar
70 g water
85 g of egg whites (3 whites)

– The batter
250 g ground almonds
250 g icing sugar
80 g egg whites
Pink food coloring

THE FILLING

– Applesauce
50 g of butter
50 g sugar
1 teaspoon vanilla extract
300 g apples, cut into small pieces

– Raspberry compote
The applesauce you prepared
200 g raspberries
150 g sugar
20 g glucose syrup
12 g raspberry brandy

THE DECOR

– Royal icing
150 g icing sugar, sifted
1 egg white
8 g lemon juice
Red food coloring
