On Today’s Menu: Potatoes Pate
INGREDIENTS:
PATE: DUCK LIVER TRUFFLE
RUSTIC WHITE BREAD – CUT TO ½ INCH THICK – TOAST FOR 30 SECONDS BE CAREFUL NOT TO BURN IT, YOU JUST WANT IT TOASTED
BUTTERMILK – 2 CUPS – MEDIUM TO LOW HEAT
RUSTIC POTATOES – 1 LARGE RUSTIC POTATOES – BOIL FOR 30 MINUTES
CHIVES – FOR GARNISH
GARLIC SALT – 1 TBSP
SALT & PEPPER – SEASON TO TASTE
MELTED BUTTER – 2 TBSP
GARLIC – 4 CLOVES MINCED – ADD TO SAUCEPAN
GREEN ONIONS – 2 TBSP
PIPING PASTRY BAG WITH TIP – 1
Recipe Directions:
Boil your rustic potato for 30 minutes skin on. In a medium saucepan add your buttermilk, garlic, garlic salt, and warm up the cream, be careful not to overheat or the cream will curdle. In your mixing bowl add your potato, cream, salt pepper, and green onions. Add the potatoes into your piping bag. Remember to get a tall cup so that the potatoes do get all over the place. Cut your rustic white bread loaf into ½ inch slices. And place the rustic bread on a plate. Take your Truffle Pate and warm it up in the microwave for 30 seconds just so it is easy to spread. Place the Pate into a piping bag and begin piping on the loaf of bread. Start with the potatoes and dot it across the slice of bread. Do this on four pieces of bread and then top and garnish with chives. Enjoy! Have you tried Pate (Duck Liver?)
