Bread:
Poolish-
– 220g bread flour
– 220g water, room temp
– heaping 1/4 teaspoon instant yeast

Finished Dough-
– 375g bread flour
– 257g water, room temp
– 12g fine sea salt
– 1/2 teaspoon (grams?) instant yeast

Spicy mayoli:
– 1/2 cup (120g) mayonnaise
– 3 cloves garlic, grated
– 2 tablespoons (30g) sriracha
– juice of 1 lemon
– salt and pepper to taste

Filling:
– 1/3 cup Spicy Mayoli (save the rest in the fridge)
– 4 slices gouda cheese
– 4 slices chedar cheese
– 2 large tomatoes (gonna brulee)
– 12 good slices mortadella, seared
– 4 large eggs, fried
– fresh basil leaves
– Spicy Mayoli
